Vintage and LBV ports are best served at a slight cellar temperature around 16 to 18 degrees Celsius, decanted for at least two hours to allow sediment to settle and the wine to breathe. Tawny and Colheita ports can be served slightly chilled at 12 to 14 degrees. The standard pour is 75 to 100ml. Port is an underserved pairing with aged hard cheeses, dark chocolate with high cocoa solids, and walnut based desserts.

Port is a fortified wine produced exclusively in the Douro Valley in northern Portugal under Denominacao de Origem Controlada regulations. Fermentation is arrested by the addition of neutral grape spirit at around 77% ABV, which halts yeast activity and preserves residual sugar. The result is a wine typically between 19 and 22% ABV with pronounced dried fruit, roasted nut, and spice character that develops further with extended cask or bottle aging.

Tawny port is aged in small oak casks, typically 550 litre pipes, which allows gradual oxidation over years or decades. This oxidative aging converts the deep ruby colour to a characteristic amber and tawny brown and transforms the fruit profile from fresh berry to dried fig, roasted almond, orange peel, and rancio. Aged Tawnies are labelled by average age: 10, 20, 30, or 40 year. A quality 20 Year Tawny is one of the finest value propositions in the fortified wine category.

Port comes exclusively from the Douro Valley in northern Portugal, one of the world's oldest demarcated wine regions, established in 1756. The steep schist terraced vineyards along the Douro River provide the extreme growing conditions required for the indigenous grape varieties, primarily Touriga Nacional, Touriga Franca, and Tinta Roriz. The wine is then transported to the lodges of Vila Nova de Gaia, near Porto, for aging and blending.
